Hubby wasn't home for dinner tonight, so I decided to use up the extra eggs and make some frittata. It turned out wonderful!
Ingredients:
1 T. Vegetable Oil
1 Cup broccoli flowerets (chopped)
1 medium carrot, shredded
1/4 cup milk
4 large eggs
1/4 tsp. salt
1/4 tsp. Frank's hot sauce
shredded cheddar cheese (or fiesta cheese) to taste.
Steps:
1. Heat oil in skillet over med-high heat
2. Cook broccoli and carrots in oil for about 5 min. stirring frequently until vegetables are crisp-tender
3. Meanwhile, beat eggs, milk, salt, and Frank's hot sauce thoroughly with a wire whisk until a uniform yellow color.
4. Pour egg mixture over vegetables. Sprinkle with cheese to taste. Reduce heat to low.
5. Cover and cook about 10min. or until set in center (knife comes out clean except some melted cheese).
